CHOCOLATE AVOCADO PUDDING RECIPE
Chocolate Avocado Pudding
Here is an easy and delicious chocolate treat perfect for a special day. It is a healthy dessert that serves 2 but can be easily adjusted for more servings.
Organic Ingredients:
6 Medjool dates
2 ripe Haas avocados
1/2 cup vanilla or chocolate coconut milk
1/3 cup raw cacoa powder
3 TBSP raw honey or maple syrup
2 tsp vanilla extract
1/4 tsp Vietnamese cinnamon powder
Pinch of pink salt
Instructions:
If not already pitted, begin by removing the pits from the dates. Then soak in hot water for 30 minutes and remove the softened dates.
Peel and pit the avocado.
In a blender, combine the soaked dates, avocado, coconut milk, raw cacoa powder, honey or maple syrup, vanilla extract, cinnamon, and pink salt. Blend on high until smooth and creamy.
Pulse the blender as needed to ensure smooth consistency.
Pour into a serving bowl or smaller individual bowls, cover, and refrigerate overnight.
Serve with chopped raw pecans, raw cacao nibs, coconut whipped cream, fresh berries, or shaved organic chocolate. Enjoy!
