NO BAKE MATCHA CHEESECAKE
No Bake Matcha Cheesecake
Organic Crust:
1 cup Medjool dates, rinsed
1 ½ cups gluten-free granola
Pinch of sea salt
Organic Ingredients:
1 ½ cup raw Brazil nuts (soaked for 30 minutes then dried)
¾ cup coconut yogurt
1 tsp vanilla extract
1 TBSP melted raw coconut oil
⅓ cup maple syrup
¼ TBSP pink salt
1 tsp Matcha tea powder
Instructions:
Make crust:
Mix all three crust ingredients in blender until a loose, dough-like consistency forms.place small amounts in bottom of mini-spring form pans or glass dishes, and press down into an even layer.
Make filling:
Add all the filling ingredients to blender and mix until smooth.
Pour into crust.
Allow cakes to set overnight in refrigerator.
