CURRIED CARROT, SWEET POTATO, AND GINGER SOUP
Curried Carrot, Sweet Potato, & Ginger Soup
Organic Ingredients:
2 tsp coconut oil
½ cup shallots, chopped
3 cups sweet potato, peeled and cubed into ½ inch pieces
1 ½ cups carrots, peeled & sliced
1 TBSP fresh ginger, peeled and grated
2 tsp organic curry powder
3 cups oil-free vegetable broth
½ teaspoon pink salt
Instructions:
Heat oil in a large saucepan over medium-high heat.
Add shallots and sauté 3 minutes or until tender.
Add sweet potato, carrots, ginger, and curry and cook 2 more minutes.
Add broth and bring to a boil. Cover, reduce heat, and simmer 25 minutes or until vegetables are tender
Stir in salt to taste
Pour half of soup in a food processor or blender and pulse until smooth. Repeat procedure with remaining soup.
