CURRIED CARROT, SWEET POTATO, AND GINGER SOUP

Curried Carrot, Sweet Potato, & Ginger Soup

Organic Ingredients:

  • 2 tsp coconut oil

  • ½ cup shallots, chopped

  • 3 cups sweet potato, peeled and cubed into ½ inch pieces

  • 1 ½ cups carrots, peeled & sliced

  • 1 TBSP fresh ginger, peeled and grated

  • 2 tsp organic curry powder

  • 3 cups oil-free vegetable broth

  • ½ teaspoon pink salt

Instructions:

  1. Heat oil in a large saucepan over medium-high heat.

  2. Add shallots and sauté 3 minutes or until tender.

  3. Add sweet potato, carrots, ginger, and curry and cook 2 more minutes.

  4. Add broth and bring to a boil. Cover, reduce heat, and simmer 25 minutes or until vegetables are tender

  5. Stir in salt to taste

  6. Pour half of soup in a food processor or blender and pulse until smooth. Repeat procedure with remaining soup.
