BLACK BEAN SOUP
Black Bean Soup
Organic Ingredients:
1 pound dry black beans, or, 32oz organic jarred beans
2 quarts of water
1/8 cup oil-free vegetable broth
1 white onion, chopped
1 cup celery, chopped
2 diced leeks
2 tsp pink salt
1 TBSP cumin
3-4 cloves minced garlic
1 fresh parsley bunch, minced
1 medium bunch of fresh tarragon, chopped
1 medium bunch of fresh basil, chopped
1 medium bunch of scallions, sliced for garnish.
Instructions:
If using dry beans, soak in water overnight. Pour off the water and rinse.
Add 3 quarts of water and bring beans to a boil 30-45 minutes, or until the beans are soft. Discard liquid from the beans and add the vegetable broth and simmer.
In a separate pan, sauté the onion, celery, leeks, and garlic.
Add vegetables and fresh herbs to the beans, with the cumin and salt.
Puree half or more of the bean mixture and return to the remaining beans. Stir well to incorporate. Garnish with the sliced scallions.
Makes approximately 8 servings
